Traveling back to New England in early June, the weather can be miserable. Traveling back to Vermont in early June, the weather can be a nightmare. Not the case this year! Carla and I flew back east to attend my nephews wedding (Congratulations to Eric and Jess). We had about a 2 hour drive from where we were staying to the wedding and forgot just how beautiful a drive it was. On this day, the sun was out, white puffy clouds and 70 degrees. Driving the back roads of Vermont with it's rolling hills and winding roads is especially scenic in the fall, but early June when everything has just turned green is picturesque as well.
So we arrived early to the wedding and decided to grab a cup of coffee to kill an hour or so. What we had forgotten is driving the back roads of Vermont, there is no "grab a cup of coffee" and you could drive for 30 minutes to find that cup. Marshfield, VT, it's on the map, but you're going to drive a bit to get there. Just so happened to be the next town over from where the wedding was taking place. We happened upon an old two story with a sign that said Bakery. We figured Bakery and coffee go hand in hand, so we stopped. Typical old New England charm. When we walked through the doors we knew we had stumble upon something special. You could actually smell the warmth and the charm (if that's possible). The seating area wasn't any bigger than your living room, with maybe 5 or 6 small tables. As soon as we walked in we were greeted by the owner, Bill Tecosky. We said we were just here for a quick cup of coffee, with which he replied, "really" as he spread his arms like a giant eagle over his display case. The case was filled with every decadent, delectable, delightful cake and pastry you can imagine. This - in pretty much the middle of nowhere, Vermont. Come to find out Bill has been reviewed by the New York Times, The Boston Globe and a host of Foodie reviews. We were not disappointed. Oh, and the coffee was pretty good too! If you're within a days drive of Marshfield, VT - check out Rainbow Sweets and Cafe, Rt. 2 Marshfield, VT. You won't regret the drive, I guarantee it.
